We’re going to pretend there is a photo of delicious steaming fried rice, with chunks of mouthwatering bacon strewn throughout.
I didn't have time to take a decent photo, since it was thrown together so quickly.
But we all know what fried rice looks like right?
Yes, yes we do
If not you could always Google it, problem solved.
Chicken Fried Rice with BACON
2 cups cooled and cooked rice
4 Chicken Breasts/Thighs, whatever you have on hand
3 garlic cloves, minced
1 Onion
1 Cup mixed veggies
5 Slices of Bacon!
1 Cup Soy Sauce
1 Tbs. sriracha (I love spicy, feel free to adjust to taste)
1 dash rice vinegar
3 Eggs
1. Season chicken with salt pepper and garlic powder throw in a hot pan and cook until no longer pink in the middle, then chop into bite size pieces.
2. Fry some bacon, Set aside.
3. Sauté Onions in bacon grease! This is optional since everyone is so damn health conscious, but boy does it taste good, I suppose you could substitute with olive oil or butter.
4. Throw in some chopped garlic and mixed veggies, let cook till garlic is fragrant
5. Scramble your eggs in a separate bowl, add some milk beat some air into them, if you like em' fluffly! Pour egg into the pot of mix veggies stir around until the eggs are no longer runny.
6. In a separate bowl mix soy sauce, rice vinegar and sriracha
7. Now, add rice, soy sauce mixture and chicken to the veggies and stir stir stir!
Notes:
-Do not use hot rice, your fried rice will turn into a big mushy mess, if you can cook ahead awesome just leave it on your counter a bit to cool, or if you are like me a rarely plan ahead cook rice spread it onto a cookie sheet and stick in the freezer until cooled. I must say this is not the proper way to cool rice, but it does get the job done.
